National Chocolate Cake Day. How to have your cake and eat it!

Did you know that tomorrow (January 27th) is National Chocolate Cake Day? It’s true!

Now I may be a Nutritional Therapist, but like most people I’m not going to say no to the occasional piece of delicious chocolate cake, especially when I know that with a few little nutritional tweaks, I can transform this most sinful of treats into a saintly snack that the whole family can enjoy!

Here are two of my favourite recipes to celebrate National Chocolate Cake Day!

This chocolate cake recipe is packed with good nutrition – it’s got potassium from bananas, protein from eggs, iron and magnesium from the cocoa powder, and healthy essential omega 3 fats from the flaxseed.

Plus it looks and tastes just like ‘normal cake’ so the kids will never know they’re eating healthy!

 

Ingredients:

  • 125g Xylitol Total Sweet sugar
  • 2 bananas
  • 150g butter (room temp) (you could use coconut oil instead if you’re off dairy)
  • 3 eggs
  • 200g Gluten Free self raising flour (you could use regular white flour, or half wholemeal and white)
  • 4 tablespoons dark cocoa powder, or raw cocoa powder
  • 1 teaspoon baking powder
  • 75ml milk/unsweetened almond milk/Koko milk/oat milk
  • 1 teaspoon vanilla extract
  • Half teaspoon cinnamon
  • 3 heaped tablespoons of ground flaxseed (linseed).

Method:

Put the sugar, bananas and butter in a blender and blitz until smooth. Add in eggs one by one, then add in the flour, baking powder and cocoa powder.

Then add in the milk, vanilla and cinnamon, and mix together well.

Finally sprinkle in the ground flaxseed and give a last quick pulse, but don’t overwork it.

Pour the mixture into a greased and lined loaf tin, and cook at 180C for about 45 minutes.

Check it’s done when a skewer goes in and comes out clean. Cool on a wire rack and serve.

So there you have it! Use these simple recipes to calm your sugar cravings and ensure you don’t fall off the healthy eating wagon!

Chocolate Broccoli Muffins

These delicious chocolate broccoli muffins are a great way to sneak some extra vegetables into children – I promise they won’t notice!

Recipe: Chocolate broccoli muffins - The family Nutrition Expert

Ingredients: 

2 eggs
75ml olive oil
100g Xylitol total sweet (or you could use brown sugar)
150g plain flour (I used gluten free)
1 teaspoon baking powder
3 tbsp dark or raw cocoa powder
1 cup steamed broccoli (about 100g)
50g dark chocolate chips

Method:

Mix the eggs, oil and xylitol in a food processor or bowl until frothy.

Add the flour, baking powder and cocoa. If using food processor, add steamed broccoli straight in and blitz. If mixing by hand, mash or finely chop the broccoli first. Then stir in the chocolate chips.

Spoon into 12 muffin cases in a muffin tray, then bake at 180C for about 12 to 15 minutes, until set and springy. Leave to cool.

I put my first batch of Chocolate Broccoli Muffins to the test by asking my daughter to give them a try, here’s how she reacted!
